Sausage, Spinach, and Sweet Potato Soup
Hot Baked Cornbread
Ingredients
- 1 (14-oz) pkg smoked sausage
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 Tbsp olive oil
- 6 cups chicken broth
- 4 cups cubed sweet potatoes
- 1 (14.5-oz) can diced tomatoes
- 1 (10-oz) pkg spinach
Instructions
- Cook sausage, onion, and garlic in hot oil in a Dutch oven over medium heat until sausage is browned and onion is tender.
- Add broth, potatoes, and tomatoes; bring to a boil, cover, reduce heat, and simmer 15 to 20 minutes or until potatoes are tender. Stir in spinach until wilted. Season to taste.
