Flounder with Pecan Browned Butter
Spinach Couscous
Ingredients
- 6 flounder fillets
- ½ tsp salt
- ½ tsp pepper
- 1 Tbsp olive oil
- ¼ cup butter
- ¼ cup chopped pecans
Instructions
- Sprinkle fish with salt and pepper. Cook in hot oil in a large skillet over medium-high heat 3 minutes per side or until fish flakes with a fork. Transfer to a platter.
- Add butter to skillet, and cook over medium heat until melted. Add nuts; cook 3 minutes or until butter is browned and nutty. Pour over fish.

- 2 (7.6-oz) pkg whole wheat couscous
- 1 (5-oz) pkg organic baby spinach, chopped
- 1 tsp lemon zest
- 1 Tbsp fresh lemon juice
- 2 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Prepare couscous according to package directions, adding spinach during 5-minute stand time.
- Add lemon zest, juice, oil, salt, and pepper to couscous; toss.
