Ham and Grits Casserole

Ingredients

  • ½ cup quick-cooking grits
  • 3 oz diced lean ham
  • 3 egg whites
  • Pinch of cayenne pepper
  • ½ cup shredded reduced-fat sharp Cheddar cheese, divided

Instructions

  1. Preheat oven to 350°F. Cook grits according to package directions. Remove from heat, and stir in ham, egg whites, pepper, and ¼ cup cheese. Pour into a small baking dish coated with cooking spray.
  2. Bake 25 to 30 minutes or until a knife inserted in center comes out clean; sprinkle with ¼ cup cheese.

  • 1 navel orange
  • 2 tsp honey
  • ½ (16-oz) pkg strawberries, sliced

Side Dish Instructions

  1. Peel and section orange over a large bowl, reserving 2 Tbsp juice in bowl. Whisk honey into juice; stir in orange sections and strawberries.
