Ham and Grits Casserole
Strawberry-Orange Toss
Ingredients
- ½ cup quick-cooking grits
- 3 oz diced lean ham
- 3 egg whites
- Pinch of cayenne pepper
- ½ cup shredded reduced-fat sharp Cheddar cheese, divided
Instructions
- Preheat oven to 350°F. Cook grits according to package directions. Remove from heat, and stir in ham, egg whites, pepper, and ¼ cup cheese. Pour into a small baking dish coated with cooking spray.
- Bake 25 to 30 minutes or until a knife inserted in center comes out clean; sprinkle with ¼ cup cheese.
Side Dish Ingredients
- 1 navel orange
- 2 tsp honey
- ½ (16-oz) pkg strawberries, sliced
Side Dish Instructions
- Peel and section orange over a large bowl, reserving 2 Tbsp juice in bowl. Whisk honey into juice; stir in orange sections and strawberries.
