Pizza Chicken with Pepperoni and Basil

Ingredients

  • 1½ lb boneless, skinless chicken breasts, halved crosswise
  • 1½ Tbsp olive oil, divided
  • 2 clove garlic, minced
  • 1 (24-oz) jar roasted garlic marinara sauce
  • 1 (1-oz) pkg fresh basil, thinly sliced and divided
  • ½ (3.5-oz) pkg pepperoni
  • 1 (8-oz) ball fresh mozzarella cheese, thinly sliced
  • ¼ tsp pepper

Instructions

  1. Pound chicken to an even thickness in a zip-top bag using the heel of your hand or a meat mallet.
  2. Preheat broiler. Cook chicken in 1 Tbsp hot oil in a large broiler-safe skillet over medium-high heat 3 to 4 minutes per side. Transfer to a plate; keep warm.
  3. Add ½ Tbsp oil and garlic to pan; sauté 1 minute. Stir in sauce and half of basil; cook 5 minutes. Return chicken to pan; top with pepperoni and cheese.
  4. Broil 2 to 3 minutes or until cheese is melted and starts to brown. Sprinkle with remaining basil and pepper. Serve over pasta.

  • 1 (16-oz) pkg angel hair pasta (or use spaghetti)
  • 2 (12-oz) pkg broccoli florets

Side Dish Instructions

  1. Cook pasta according to package directions.
  2. Steam broccoli according to package directions; season with salt and pepper to taste.
