Beef and Romaine Stir-Fry

Ingredients

  • 1 (6-oz) pkg rice stick noodles
  • ½ cup water
  • 6 Tbsp low-sodium soy sauce
  • 2 Tbsp rice vinegar
  • 2 Tbsp cornstarch
  • 1 tsp honey
  • ¼ tsp crushed red pepper
  • 1 tsp vegetable oil
  • 1 head romaine lettuce, cut into ½-inch strips
  • 1 red bell pepper, thinly sliced
  • 4 cloves garlic, minced
  • 2 cups reserved shredded pot roast (from Cajun Pot Roast recipe)

Instructions

  1. Soak noodles according to package directions; drain.
  2. Stir together ½ cup water, soy sauce, vinegar, cornstarch, honey, and red pepper.
  3. Heat oil in a large skillet over medium-high heat; add lettuce, bell pepper, and garlic. Cook 2 minutes.
  4. Add water mixture, and cook 2 to 3 minutes or until thickened and lettuce is wilted.
  5. Stir in roast, and cook until thoroughly heated; stir in noodles.
