Beef and Romaine Stir-Fry

Ingredients
- 1 (6-oz) pkg rice stick noodles
- ½ cup water
- 6 Tbsp low-sodium soy sauce
- 2 Tbsp rice vinegar
- 2 Tbsp cornstarch
- 1 tsp honey
- ¼ tsp crushed red pepper
- 1 tsp vegetable oil
- 1 head romaine lettuce, cut into ½-inch strips
- 1 red bell pepper, thinly sliced
- 4 cloves garlic, minced
- 2 cups reserved shredded pot roast (from Cajun Pot Roast recipe)
Instructions
- Soak noodles according to package directions; drain.
- Stir together ½ cup water, soy sauce, vinegar, cornstarch, honey, and red pepper.
- Heat oil in a large skillet over medium-high heat; add lettuce, bell pepper, and garlic. Cook 2 minutes.
- Add water mixture, and cook 2 to 3 minutes or until thickened and lettuce is wilted.
- Stir in roast, and cook until thoroughly heated; stir in noodles.
