Barbecue Shepherd's Pie
Romaine and Apple Salad
Ingredients
- 1½ lb ground beef
- 1 onion, diced
- 2 (15-oz) can chili beans, drained
- 1 cup barbecue sauce
- 2 (4-oz) envelopes butter and herb mashed potatoes
- 1 cup shredded Cheddar cheese
Instructions
- Cook beef and onion in an ovenproof skillet until browned and crumbly; drain. Add beans and barbecue sauce; simmer 8 minutes.
- Prepare potatoes according to package directions. Preheat broiler.
- Spoon potatoes over meat mixture in skillet; sprinkle with cheese. Broil until potatoes begin to brown.

- 1 head romaine lettuce, chopped
- 2 sweet apples, chopped
- ½ cup balsamic vinaigrette
Side Dish Instructions
- Toss together romaine and apples in a large bowl; add dressing, and toss.
