Barbecue Shepherd's Pie

Romaine and Apple Salad

Ingredients

  • 1½ lb ground beef
  • 1 onion, diced
  • 2 (15-oz) can chili beans, drained
  • 1 cup barbecue sauce
  • 2 (4-oz) envelopes butter and herb mashed potatoes
  • 1 cup shredded Cheddar cheese

Instructions

  1. Cook beef and onion in an ovenproof skillet until browned and crumbly; drain. Add beans and barbecue sauce; simmer 8 minutes.
  2. Prepare potatoes according to package directions. Preheat broiler.
  3. Spoon potatoes over meat mixture in skillet; sprinkle with cheese. Broil until potatoes begin to brown.

Side Dish Ingredients

  • 1 head romaine lettuce, chopped
  • 2 sweet apples, chopped
  • ½ cup balsamic vinaigrette

Side Dish Instructions

  1. Toss together romaine and apples in a large bowl; add dressing, and toss.
