Sausage, Zucchini, and Bean Soup

Ingredients

  • ½ lb ground Italian turkey sausage
  • 1 Tbsp olive oil
  • 1 zucchini, cut into half-moons
  • 1 yellow squash, cut into half-moons
  • ½ onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 (14.5-oz) can diced tomatoes with Italian seasonings
  • 3 cups chicken broth
  • 1 (15-oz) can cannellini beans, drained and rinsed
  • ½ tsp dried thyme

Instructions

  1. Cook sausage in hot oil in a Dutch oven over medium-high heat until browned and crumbly. Add zucchini, squash, onion, and garlic; cook 10 minutes or until tender.
  2. Add tomatoes, broth, beans, and thyme; bring to a boil, reduce heat, and simmer 20 minutes.

Side Dish Ingredients

  • 1 clove garlic, halved
  • ½ (16-oz) loaf French bread, sliced
  • 2 Tbsp olive oil
  • 1 tsp dried crushed rosemary

Side Dish Instructions

  1. Preheat broiler. Rub cut sides of garlic over bread; brush with oil, and sprinkle with rosemary and salt and pepper to taste.
  2. Broil 1 to 2 minutes or until toasted.
