Baked Salmon with Spinach and Tomatoes

Ingredients

  • 1 (9-oz) pkg spinach
  • 1 Tbsp olive oil
  • 2 (6-oz) salmon fillets
  • 1 Tbsp fresh orange juice
  • ¼ tsp garlic salt
  • ¼ tsp pepper
  • 1 Roma tomato, thinly sliced
  • 1 Tbsp chopped fresh dill

Instructions

  1. Preheat oven to 425°F. Toss together spinach and oil on a small foil-lined rimmed baking sheet; spread in a single layer.
  2. Arrange fish on spinach; drizzle with orange juice, and sprinkle with garlic salt and pepper. Top fish with tomato; sprinkle with dill.
  3. Bake 12 to 15 minutes or until fish flakes with a fork.

  • 2 cups peeled, cubed butternut squash

  • ⅛ tsp pepper
