Baked Salmon with Spinach and Tomatoes
Roasted Butternut SquashIngredients
- 1 (9-oz) pkg spinach
- 1 Tbsp olive oil
- 2 (6-oz) salmon fillets
- 1 Tbsp fresh orange juice
- ¼ tsp garlic salt
- ¼ tsp pepper
- 1 Roma tomato, thinly sliced
- 1 Tbsp chopped fresh dill
Instructions
- Preheat oven to 425°F. Toss together spinach and oil on a small foil-lined rimmed baking sheet; spread in a single layer.
- Arrange fish on spinach; drizzle with orange juice, and sprinkle with garlic salt and pepper. Top fish with tomato; sprinkle with dill.
- Bake 12 to 15 minutes or until fish flakes with a fork.

- ⅛ tsp pepper
