Roast Beef Cracker Stackers
Apple and Blueberry Toss
Ingredients
- ½ lb sliced low-sodium roast beef
- 4 (0.67-oz) slices reduced-fat Swiss cheese
- 4 tsp yellow mustard
- 32 multigrain crackers (such as Breton)
Instructions
- Cut roast beef into pieces about the same size as crackers.
- Cut each slice of cheese into quarters.
- Spread ¼ tsp mustard on 1 side of 16 crackers; layer with roast beef and cheese. Top with remaining crackers.

- 2 apples, chopped
- 1 (4.4-or 6-oz) container fresh blueberries
- 2 tsp fresh lemon juice
