Roast Beef Cracker Stackers

Ingredients

  • ½ lb sliced low-sodium roast beef
  • 4 (0.67-oz) slices reduced-fat Swiss cheese
  • 4 tsp yellow mustard
  • 32 multigrain crackers (such as Breton)

Instructions

  1. Cut roast beef into pieces about the same size as crackers.
  2. Cut each slice of cheese into quarters.
  3. Spread ¼ tsp mustard on 1 side of 16 crackers; layer with roast beef and cheese. Top with remaining crackers.

Side Dish Ingredients

  • 2 apples, chopped
  • 1 (4.4-or 6-oz) container fresh blueberries
  • 2 tsp fresh lemon juice
