Roasted Sweet Potato Wedges and Green Beans

Ingredients

  • ½ lb lean ground beef
  • 1 Tbsp butter
  • 1 shallot, thinly sliced
  • 2 tsp chopped fresh thyme
  • ¼ tsp gluten-free Worcestershire sauce

Instructions

  1. Shape beef into 2 patties; sprinkle both sides lightly with salt and pepper. Cook in a nonstick skillet over medium heat 4 to 5 minutes per side or until no longer pink. Remove from skillet; keep warm.
  2. Melt butter in skillet; add shallot, and cook 4 to 5 minutes or until tender. Stir in thyme and Worcestershire sauce. Cook 1 minute. Serve sauce over patties.

Side Dish Ingredients

  • ¾ lb sweet potatoes
  • 2 tsp olive oil
  • 2 tsp minced garlic
  • 2 tsp chopped fresh rosemary
  • 1 (8-oz) pkg thin green beans
  • 2 tsp butter

Side Dish Instructions

  1. Preheat oven to 475°F. Cut potatoes lengthwise into ½-inch-thick wedges. Toss potatoes with oil, garlic, and rosemary on a rimmed baking sheet. Bake 20 to 25 minutes or until browned, turning once.
  2. Meanwhile, microwave beans according to package directions. Toss with butter. Season potatoes and beans with salt and pepper to taste.
