Cheesy Ham-and-Egg Breakfast Casserole
Cinnamon Apples
Ingredients
- 1 (5-oz) pkg seasoned croutons
- 1 (8-oz) pkg shredded Cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 (16-oz) pkg chopped cooked ham
- 2½ cups half-and-half
- 10 large eggs
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp chopped fresh parsley
Instructions
- Sprinkle croutons into a lightly greased 13- x 9-inch baking dish. Top with both cheeses and ham.
- Whisk together half-and-half, eggs, salt, and pepper in a bowl. Slowly pour over ham in baking dish. Cover and chill overnight.
- Let stand at room temperature 30 minutes. Preheat oven to 350°F.
- Bake 35 to 45 minutes or until center is puffed and set. Let stand 10 minutes; sprinkle with parsley.
Side Dish Ingredients
- 3 large red apples, halved and cored
- 3 Tbsp butter, cut into pieces
- ¼ cup packed brown sugar
- ½ tsp ground cinnamon
Side Dish Instructions
- Preheat oven to 350°F.
- Place apples, cut side up, in a greased 9-inch square pan. Top with butter, brown sugar, and cinnamon. Bake 25 minutes or until apples are tender.
