Cheesy Ham-and-Egg Breakfast Casserole

Ingredients

  • 1 (5-oz) pkg seasoned croutons
  • 1 (8-oz) pkg shredded Cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 (16-oz) pkg chopped cooked ham
  • 2½ cups half-and-half
  • 10 large eggs
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp chopped fresh parsley

Instructions

  1. Sprinkle croutons into a lightly greased 13- x 9-inch baking dish. Top with both cheeses and ham.
  2. Whisk together half-and-half, eggs, salt, and pepper in a bowl. Slowly pour over ham in baking dish. Cover and chill overnight.
  3. Let stand at room temperature 30 minutes. Preheat oven to 350°F.
  4. Bake 35 to 45 minutes or until center is puffed and set. Let stand 10 minutes; sprinkle with parsley.

Side Dish Ingredients

  • 3 large red apples, halved and cored
  • 3 Tbsp butter, cut into pieces
  • ¼ cup packed brown sugar
  • ½ tsp ground cinnamon

Side Dish Instructions

  1. Preheat oven to 350°F.
  2. Place apples, cut side up, in a greased 9-inch square pan. Top with butter, brown sugar, and cinnamon. Bake 25 minutes or until apples are tender.
