Parmesan Parsley Roasted Salmon

Cheddar Broccoli Rice and Steamed Green Beans

Ingredients

  • 1 (2-lb) salmon fillet
  • ½ cup shredded Parmesan cheese
  • ¼ cup chopped fresh parsley
  • 1 Tbsp minced garlic

Instructions

  1. Preheat oven to 425°F.
  2. Place salmon, skin side down, on a parchment lined baking pan. Season with salt and pepper.
  3. Cover fish lightly with a second piece of parchment, and bake 10 minutes. Uncover, and sprinkle with cheese, parsley, and garlic.
  4. Bake uncovered, 10 minutes more or to desired doneness. Let stand 5 minutes before serving.

  • 2 (5.7-oz) pkg Cheddar broccoli rice mixes
  • 2 (8-oz) pkg thin green beans

Side Dish Instructions

  1. Prepare rice according to package directions.
  2. Steam green beans according to package directions; season to taste.
