Mushroom Gravy-Smothered Chicken Meatballs
Sour Cream Mashed Potatoes and Broccoli
Ingredients
- 1 (16-oz) pkg uncooked chicken meatballs (such as Murray's)
- 1 Tbsp butter
- 2 (4-oz) pkg gourmet blend mushrooms
- ½ (8-oz) pkg chopped onions
- 1 Tbsp minced garlic
- ¼ tsp salt
- ¼ tsp pepper
- 2 Tbsp all-purpose flour
- 1 cup low-sodium beef broth
Instructions
- Preheat oven to 425°F. Cut meatballs in half. Place on a wire rack on a rimmed baking sheet. Bake 15 minutes.
- Meanwhile, melt butter in a large nonstick skillet over medium-high heat. Add mushrooms, onions, garlic, salt, and pepper; cook 6 minutes or until browned and tender.
- Stir in flour; cook 1 minute. Gradually add broth, stirring until blended. Return to a boil, reduce heat, and simmer 10 minutes or until sauce is thickened. Stir in meatballs. Serve over Sour Cream Mashed Potatoes.

- 1 (12-oz) pkg broccoli florets
- 1 Tbsp butter
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 (24-oz) pkg refrigerated mashed potatoes (such as Simply Potatoes)
- ¼ cup reduced-fat sour cream
Side Dish Instructions
- Cook broccoli according to package directions; toss with butter, salt, and pepper.
- Heat potatoes according to package directions; reserve half of potatoes for a future meal. Stir sour cream into remaining half of potatoes.
