Mushroom Gravy-Smothered Chicken Meatballs

Ingredients

  • 1 (16-oz) pkg uncooked chicken meatballs (such as Murray's)
  • 1 Tbsp butter
  • 2 (4-oz) pkg gourmet blend mushrooms
  • ½ (8-oz) pkg chopped onions
  • 1 Tbsp minced garlic
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 Tbsp all-purpose flour
  • 1 cup low-sodium beef broth

Instructions

  1. Preheat oven to 425°F. Cut meatballs in half. Place on a wire rack on a rimmed baking sheet. Bake 15 minutes.
  2. Meanwhile, melt butter in a large nonstick skillet over medium-high heat. Add mushrooms, onions, garlic, salt, and pepper; cook 6 minutes or until browned and tender.
  3. Stir in flour; cook 1 minute. Gradually add broth, stirring until blended. Return to a boil, reduce heat, and simmer 10 minutes or until sauce is thickened. Stir in meatballs. Serve over Sour Cream Mashed Potatoes.

  • 1 (12-oz) pkg broccoli florets
  • 1 Tbsp butter
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 (24-oz) pkg refrigerated mashed potatoes (such as Simply Potatoes)
  • ¼ cup reduced-fat sour cream

Side Dish Instructions

  1. Cook broccoli according to package directions; toss with butter, salt, and pepper.
  2. Heat potatoes according to package directions; reserve half of potatoes for a future meal. Stir sour cream into remaining half of potatoes.
