Meat Lover's Pizza Mac and Cheese
Wedge Salads with Creamy Balsamic DressingIngredients
- 2 (8.5-oz) pouches microwavable elbow macaroni (such as Barilla)
- 1 (20-oz) pkg lean ground turkey
- 2 Tbsp butter
- 2 Tbsp all-purpose flour
- 1 cup 2% reduced-fat milk
- 1½ cups natural marinara sauce (such as Rao's)
- 1½ cups shredded part-skim mozzarella cheese
- 2 Tbsp turkey pepperoni slices
Instructions
- Cook pasta according to package directions.
- Cook turkey in a large skillet over medium-high heat 5 to 6 minutes or until done. Remove from skillet.
- Melt butter in skillet over medium-high heat. Whisk in flour, and cook 2 minutes. Add milk and marinara sauce; cook, whisking constantly, 5 minutes until thickened. Remove from heat.
- Stir in 1 cup cheese until melted. Stir in pasta, and top with ½ cup cheese and pepperoni. Cover and cook 1 minute or until cheese is melted.
Side Dish Ingredients
- 1 large head iceberg lettuce
- ½ cup refrigerated creamy balsamic yogurt dressing
- ¼ cup very thinly sliced red onion
- 1 tomato, chopped
- 2 Tbsp roasted, salted sunflower kernels
Side Dish Instructions
- Cut head of lettuce in half vertically; cut each halve into 3 wedges. Place wedges on 6 plates, and drizzle with dressing. Sprinkle with onion, tomato, and sunflower kernels.
