Wedge Salads with Creamy Balsamic Dressing

Ingredients

  • 2 (8.5-oz) pouches microwavable elbow macaroni (such as Barilla)
  • 1 (20-oz) pkg lean ground turkey
  • 2 Tbsp butter
  • 2 Tbsp all-purpose flour
  • 1 cup 2% reduced-fat milk
  • 1½ cups natural marinara sauce (such as Rao's)
  • 1½ cups shredded part-skim mozzarella cheese
  • 2 Tbsp turkey pepperoni slices

Instructions

  1. Cook pasta according to package directions.
  2. Cook turkey in a large skillet over medium-high heat 5 to 6 minutes or until done. Remove from skillet.
  3. Melt butter in skillet over medium-high heat. Whisk in flour, and cook 2 minutes. Add milk and marinara sauce; cook, whisking constantly, 5 minutes until thickened. Remove from heat.
  4. Stir in 1 cup cheese until melted. Stir in pasta, and top with ½ cup cheese and pepperoni. Cover and cook 1 minute or until cheese is melted.

Side Dish Ingredients

  • 1 large head iceberg lettuce
  • ½ cup refrigerated creamy balsamic yogurt dressing
  • ¼ cup very thinly sliced red onion
  • 1 tomato, chopped
  • 2 Tbsp roasted, salted sunflower kernels

Side Dish Instructions

  1. Cut head of lettuce in half vertically; cut each halve into 3 wedges. Place wedges on 6 plates, and drizzle with dressing. Sprinkle with onion, tomato, and sunflower kernels.
