Honey-Balsamic Pork Chops

Ingredients

  • 2 (1-inch-thick) boneless pork chops
  • 1 Tbsp olive oil
  • ½ tsp salt
  • ¼ tsp pepper
  • 4 tsp honey
  • 1 Tbsp melted butter
  • 2 tsp balsamic vinegar

Instructions

  1. Preheat oven to 425°F. Brush pork with oil; sprinkle with salt and pepper. Stir together honey, butter, and vinegar.
  2. Cook pork in a large ovenproof skillet over medium-high heat 4 minutes. Turn pork over, and brush with honey mixture. Transfer skillet to oven, and bake 6 minutes or until done.

Side Dish Ingredients

  • 1 (8.8-oz) pkg microwavable brown rice
  • 1 Tbsp butter
  • 1 Tbsp brown sugar
  • 1 Tbsp apple cider
  • 2 firm pears, cored and quartered

Side Dish Instructions

  1. Preheat oven to 425°F. Cook rice according to package directions.
  2. Melt butter in a large ovenproof skillet. Stir in sugar and cider, and cook until syrupy. Stir in pears. Transfer skillet to oven, and bake 8 minutes or until tender.
