Herbed Flank Steak

Ingredients

  • ¼ tsp coriander seeds
  • ¼ tsp fennel seeds
  • 1 Tbsp olive oil
  • 1 clove garlic, minced
  • ¾ tsp chopped fresh thyme
  • ¼ tsp lemon zest
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ lb flank steak

Instructions

  1. Place seeds in a small zip-top plastic bag. Crush using a meat mallet. Combine crushed seeds, oil, garlic, thyme, lemon zest, salt, and pepper.
  2. Rub steak with seed mixture. Cook in a cast-iron skillet or grill pan over medium-high heat 5 to 6 minutes per side or to desired doneness. Let stand 5 minutes before thinly slicing.

  • ½ (16-oz) pkg whole wheat penne pasta
  • 1 (8.6-oz) pkg balsamic salad kit (such as Dole)
  • 1 cup organic grape tomatoes

Side Dish Instructions

  1. Cook pasta according to package directions.
  2. Toss together pasta, salad kit, and tomatoes.
