Ground Turkey, Asparagus and Basil Stir-Fry

Ingredients

  • 1½ lb ground turkey
  • 1 lb frozen cut asparagus, thawed
  • 1 (10-oz) pkg matchstick carrots
  • 4 green onions, thinly sliced
  • 4 cloves garlic, minced
  • ¼ cup low-sodium soy sauce
  • ¼ cup Thai sweet chili sauce
  • ½ cup thinly sliced fresh basil

Instructions

  1. Cook ground turkey in a large skillet over medium heat, stirring until turkey is browned and crumbly.
  2. Stir in asparagus, carrots, green onions and garlic; cook, stirring, 2 minutes.
  3. Stir in soy sauce and chili sauce; cook 2 minutes.
  4. Stir in basil.

  • 1 cup quinoa
  • 1½ Tbsp sesame oil
  • 1 tsp grated orange zest
  • ¼ tsp salt

Side Dish Instructions

  1. Prepare quinoa according to package directions; toss with remaining ingredients.
