Slow Cooker Smoky White Bean Stew

Ingredients

  • 1 (16-oz) pkg dried navy beans, sorted
  • 2 cups chopped onions
  • 2 cups chopped carrots
  • 2 cups chopped celery
  • 2 cloves garlic, minced
  • 2 Tbsp dried rosemary, crushed
  • 2 tsp dried thyme
  • 1 tsp salt
  • 1 tsp pepper
  • ½ tsp smoked paprika (or use regular)
  • 1 (48-oz) carton vegetable broth

Instructions

  1. Bring beans and water to cover to a boil in a stockpot; cook 1 minute. Remove from heat, and let stand, covered, 1 hour.
  2. Drain beans, and place in a 5- or 6-quart slow cooker. Add onions and all remaining ingredients.
  3. Cover and cook on LOW 9 to 10 hours or until beans are tender.
