Christmas Morning Breakfast Frittata
Mini Marshmallow Ambrosia
Ingredients
- ½ (16-oz) pkg Italian-style ground pork sausage (or use mild sausage)
- ¼ red bell pepper, diced
- ¼ cup chopped onion
- 2 Tbsp vegetable oil, divided
- 2 cups frozen shredded hash browns, thawed
- ¾ tsp salt
- ½ tsp pepper
- 1 cup shredded Cheddar cheese
- 5 large eggs
- ½ cup milk
- ½ tsp paprika
Instructions
- Cook sausage in a 10-inch ovenproof skillet 5 minutes until browned and crumbly. Add bell pepper and onion; cook until sausage is no longer pink; remove from skillet, and drain.
- Add 1 Tbsp oil to skillet. Add hash browns, and spread in an even layer. Sprinkle with ½ tsp each salt and pepper; cook 7 minutes until browned.
- Flip hash browns; drizzle with 1 Tbsp oil, and top with sausage mixture and cheese.
- Whisk together eggs, milk, and ¼ tsp salt. Drizzle egg mixture over cheese, and sprinkle with paprika.
- Cover and cook over medium heat 15 minutes.
- Preheat broiler. Uncover skillet. Broil on middle rack 5 minutes or until browned on top and set in center.
Side Dish Ingredients
- ½ cup sweetened flaked coconut
- ½ cup sour cream
- 1 (20-oz) can pineapple tidbits in juice, drained
- 1 (11-oz) can mandarin oranges, drained
- 1 cup mini marshmallows
Side Dish Instructions
- Stir together coconut and sour cream in a bowl; add pineapple, oranges, and marshmallows, and gently combine. Chill until ready to serve.
