Christmas Morning Breakfast Frittata

Ingredients

  • ½ (16-oz) pkg Italian-style ground pork sausage (or use mild sausage)
  • ¼ red bell pepper, diced
  • ¼ cup chopped onion
  • 2 Tbsp vegetable oil, divided
  • 2 cups frozen shredded hash browns, thawed
  • ¾ tsp salt
  • ½ tsp pepper
  • 1 cup shredded Cheddar cheese
  • 5 large eggs
  • ½ cup milk
  • ½ tsp paprika

Instructions

  1. Cook sausage in a 10-inch ovenproof skillet 5 minutes until browned and crumbly. Add bell pepper and onion; cook until sausage is no longer pink; remove from skillet, and drain.
  2. Add 1 Tbsp oil to skillet. Add hash browns, and spread in an even layer. Sprinkle with ½ tsp each salt and pepper; cook 7 minutes until browned.
  3. Flip hash browns; drizzle with 1 Tbsp oil, and top with sausage mixture and cheese.
  4. Whisk together eggs, milk, and ¼ tsp salt. Drizzle egg mixture over cheese, and sprinkle with paprika.
  5. Cover and cook over medium heat 15 minutes.
  6. Preheat broiler. Uncover skillet. Broil on middle rack 5 minutes or until browned on top and set in center.

Side Dish Ingredients

  • ½ cup sweetened flaked coconut
  • ½ cup sour cream
  • 1 (20-oz) can pineapple tidbits in juice, drained
  • 1 (11-oz) can mandarin oranges, drained
  • 1 cup mini marshmallows

Side Dish Instructions

  1. Stir together coconut and sour cream in a bowl; add pineapple, oranges, and marshmallows, and gently combine. Chill until ready to serve.
