BLT Pasta Salad

Ingredients

  • 8 oz whole-wheat farfalle pasta (or other pasta)
  • 2 tomatoes, chopped
  • 1 (5-oz) pkg spring mix
  • 8 slices center-cut bacon, cooked and crumbled
  • ⅓ cup reduced-fat mayonnaise
  • 1 Tbsp Dijon mustard
  • 3 Tbsp apple cider vinegar
  • ¼ tsp salt
  • ½ tsp pepper

Instructions

  1. Cook pasta according to package directions. Combine pasta, tomatoes, and spring mix in a large bowl. Crumble bacon over pasta.
  2. Combine mayonnaise, mustard, vinegar, salt, and pepper in a small bowl. Whisk to combine. Pour dressing over pasta, stirring to coat.
  3. Pack pasta in 4 containers, if desired.
