BLT Pasta Salad

Ingredients
- 8 oz whole-wheat farfalle pasta (or other pasta)
- 2 tomatoes, chopped
- 1 (5-oz) pkg spring mix
- 8 slices center-cut bacon, cooked and crumbled
- ⅓ cup reduced-fat mayonnaise
- 1 Tbsp Dijon mustard
- 3 Tbsp apple cider vinegar
- ¼ tsp salt
- ½ tsp pepper
Instructions
- Cook pasta according to package directions. Combine pasta, tomatoes, and spring mix in a large bowl. Crumble bacon over pasta.
- Combine mayonnaise, mustard, vinegar, salt, and pepper in a small bowl. Whisk to combine. Pour dressing over pasta, stirring to coat.
- Pack pasta in 4 containers, if desired.
