Cheddar Grits Bake with Bacon and Tomatoes

Ingredients
- 1 cup quick-cooking grits
- ¾ cup freshly shredded reduced-fat sharp Cheddar cheese
- 2 large eggs, beaten
- ¼ tsp salt
- ¼ tsp pepper
- 8 slices center-cut bacon
- 1 pint grape tomatoes, halved
Instructions
- Preheat oven to 350°F. Cook grits according to package directions.
- Stir ½ cup cheese into hot grits; let cool 5 minutes. Stir in eggs, salt and pepper to grits mixture.
- Coat an 11- x 7-inch baking dish with cooking spray. Spoon grits mixture into dish. Top with ¼ cup cheese.
- Bake 30 minutes.
- Meanwhile, cook bacon in a medium skillet over medium heat 6 to 8 minutes or until crisp; drain and crumble bacon.
- Top grits with bacon and tomatoes.
