Cheddar Grits Bake with Bacon and Tomatoes

Ingredients

  • 1 cup quick-cooking grits
  • ¾ cup freshly shredded reduced-fat sharp Cheddar cheese
  • 2 large eggs, beaten
  • ¼ tsp salt
  • ¼ tsp pepper
  • 8 slices center-cut bacon
  • 1 pint grape tomatoes, halved

Instructions

  1. Preheat oven to 350°F. Cook grits according to package directions.
  2. Stir ½ cup cheese into hot grits; let cool 5 minutes. Stir in eggs, salt and pepper to grits mixture.
  3. Coat an 11- x 7-inch baking dish with cooking spray. Spoon grits mixture into dish. Top with ¼ cup cheese.
  4. Bake 30 minutes.
  5. Meanwhile, cook bacon in a medium skillet over medium heat 6 to 8 minutes or until crisp; drain and crumble bacon.
  6. Top grits with bacon and tomatoes.
