Sheet Pan Maple-Mustard Chicken with Squash and Brussels Sprouts

Ingredients

  • 1 (1½-lb) acorn squash
  • 2 lb chicken cutlets (about 6)
  • 1 (16-oz) pkg halved Brussels sprouts
  • ¼ cup olive oil
  • 2 Tbsp pure maple syrup
  • 2 Tbsp minced garlic
  • 2 Tbsp Dijon mustard
  • 2 Tbsp chopped fresh rosemary
  • 1 tsp kosher salt
  • ½ tsp pepper

Instructions

  1. Preheat oven to 425°F; place 2 large rimmed baking sheets in oven while preheating. Halve squash lengthwise; remove seeds, and cut squash crosswise into slices.
  2. Toss together squash and remaining ingredients in a large bowl. Arrange in an even layer on preheated baking sheets.
  3. Bake 20 to 25 minutes or until chicken is done and vegetables are tender.
