Sheet Pan Maple-Mustard Chicken with Squash and Brussels Sprouts
Ingredients
- 1 (1½-lb) acorn squash
- 2 lb chicken cutlets (about 6)
- 1 (16-oz) pkg halved Brussels sprouts
- ¼ cup olive oil
- 2 Tbsp pure maple syrup
- 2 Tbsp minced garlic
- 2 Tbsp Dijon mustard
- 2 Tbsp chopped fresh rosemary
- 1 tsp kosher salt
- ½ tsp pepper
Instructions
- Preheat oven to 425°F; place 2 large rimmed baking sheets in oven while preheating. Halve squash lengthwise; remove seeds, and cut squash crosswise into slices.
- Toss together squash and remaining ingredients in a large bowl. Arrange in an even layer on preheated baking sheets.
- Bake 20 to 25 minutes or until chicken is done and vegetables are tender.
