Tilapia Provençal
Green Beans SautéIngredients
- 6 (6-oz) tilapia fillets
- 1 tsp Italian seasoning
- 2 Tbsp olive oil
- 2 cups chopped tomatoes
- 1 red bell pepper, chopped
- 4 green onions, thinly sliced
- 2 cloves garlic, minced
- ½ cup dry white wine
- 2 Tbsp fresh lemon juice
Instructions
- Season fish lightly with salt and pepper; sprinkle with Italian seasoning. Cook, in batches, in hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes per side or until fish flakes with a fork. Remove from skillet; keep warm.
- Cook tomato, bell pepper, onions, and garlic in skillet, stirring often, 5 minutes. Add wine and lemon juice. Cook 2 minutes or until thickened. Serve sauce over fish.
