Ingredients

  • 6 (6-oz) tilapia fillets
  • 1 tsp Italian seasoning
  • 2 Tbsp olive oil
  • 2 cups chopped tomatoes
  • 1 red bell pepper, chopped
  • 4 green onions, thinly sliced
  • 2 cloves garlic, minced
  • ½ cup dry white wine
  • 2 Tbsp fresh lemon juice

Instructions

  1. Season fish lightly with salt and pepper; sprinkle with Italian seasoning. Cook, in batches, in hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes per side or until fish flakes with a fork. Remove from skillet; keep warm.
  2. Cook tomato, bell pepper, onions, and garlic in skillet, stirring often, 5 minutes. Add wine and lemon juice. Cook 2 minutes or until thickened. Serve sauce over fish.

Side Dish Instructions

  1. Sauté green beans and garlic in hot oil in a large skillet oil until crisp-tender. Season with salt and pepper to taste.
