Ground Beef-Sausage Ragu over Spaghetti Squash

Ingredients

  • 3 (1-lb) spaghetti squash, halved lengthwise and seeded
  • 1 lb lean ground beef
  • ½ lb spicy Italian turkey sausage links, casings removed
  • 1½ cups chopped onions
  • 1 (24-oz) jar marinara sauce
  • ¾ cup freshly grated Parmesan cheese
  • ¼ cup chopped fresh basil

Instructions

  1. Place squash, cut sides down, in batches if needed, in a 13- x 9-inch baking dish. Cover with plastic wrap; microwave 15 minutes or until fork-tender.
  2. Meanwhile, cook beef, sausage, and onions in a large skillet over medium-high heat 6 to 8 minutes or until browned and crumbly. Stir in marinara sauce; cook 3 to 4 minutes or until thoroughly heated.
  3. Turn squash cut sides up. Divide beef mixture among squash. Sprinkle with cheese and basil.
