Garlic Chicken with Orzo Noodles

Ingredients

  • 1 cup uncooked orzo pasta
  • 2 Tbsp olive oil
  • 2 cloves garlic
  • ¼ tsp crushed red pepper
  • 2 boneless, skinless chicken breast halves, cut into bite-size pieces
  • Salt to taste
  • 1 Tbsp chopped fresh parsley
  • 2 cups fresh spinach
  • Grated Parmesan cheese for topping

Instructions

  1. Bring a large pot of lightly salted water to a boil. Add orzo pasta, cook for 8 to 10 minutes, until al dente, and drain.
  2. Heat the oil in a skillet over medium-high heat, and cook the garlic and red pepper 1 minute, until garlic is golden brown.
  3. Stir in chicken, season with salt, and cook 2 to 5 minutes, until lightly browned and juices run clear. Reduce heat to medium, and mix in the parsley and cooked orzo.
  4. Place spinach in the skillet. Continue cooking 5 minutes, stirring occasionally, until spinach is wilted. Serve topped with Parmesan cheese.

Side Dish Ingredients

  • ½ cup salted cashews
  • 3 Tbsp olive oil, divided
  • 1 onion, minced
  • 5 large garlic cloves
  • 1 bunch kale, stems removed
  • 1 bunch spinach, stems removed
  • Sea salt to taste
  • White pepper to taste

Side Dish Instructions

  1. Preheat an oven to 350°F.
  2. Combine the cashews and 1 Tbsp olive oil in a bowl; toss to coat the cashews in the oil. Spread onto a baking sheet.
  3. Toast the cashews in the preheated oven until golden brown and fragrant, shaking the baking sheet occasionally, 5 to 10 minutes. Watch carefully so they don't burn. Set aside.
  4. Heat the 2 Tbsp olive oil in a skillet. Cook and stir the onion in the hot oil until the onion softens, about 5 minutes.
  5. Stir the garlic into the onion, and cook for 1 minute more before stirring the kale into the onion and garlic mixture. Place a cover on the skillet and cook, stirring occasionally, until the kale softens, about 7 minutes.
  6. Stir the spinach into the mixture, season with the sea salt and white pepper, and continue cooking until the spinach wilts, about 3 minutes. Toss the cashews with the mixture to serve.
