Sausage, White Bean, and Kale Soup
Gruyère Cheese CroutonsIngredients
- 1 (16-oz) pkg ground hot Italian turkey sausage
- 1 (8-oz) pkg chopped onions (about 1½ cups)
- 1 cup matchstick-cut carrots, chopped
- 2 Tbsp minced garlic
- 6 cups low-sodium chicken broth
- 2 (15-oz) cans cannellini beans, drained and rinsed
- 2 tsp Italian seasoning
- ½ tsp salt
- ½ tsp pepper
- ½ (16-oz) pkg chopped kale
Instructions
- Cook sausage, onions, carrots, and garlic in a large Dutch oven over medium-high heat until sausage is browned and crumbly; drain, if needed, and return to pot.
- Add broth, beans, Italian seasoning, salt, and pepper; bring to a boil. Reduce heat, cover, and simmer 5 minutes, stirring occasionally.
- Stir in kale, and cook 10 minutes. Top each serving with Gruyère Cheese Croutons recipe.
Side Dish Ingredients
- 3 Tbsp butter, softened
- 12 (1-oz) slices whole-grain bread
- 4 oz grated Gruyère cheese
Side Dish Instructions
- Preheat oven to 450°F. Spread butter over 1 side of each bread slice. Place 6 slices of bread, buttered sides down, on a baking sheet. Top each with cheese and remaining bread slices, buttered sides up.
- Bake sandwiches 6 to 8 minutes per side or until toasted and cheese is melted. Cut into cubes.
