Ingredients

  • 2 (8.8-oz) pouches microwavable brown rice
  • 1 (9-oz) pkg chopped romaine lettuce
  • 2 (15-oz) cans black beans, drained
  • 1 cup shredded Monterey Jack cheese
  • 1 avocado, thinly sliced
  • 1 cup fresh salsa
  • ½ (4.5-oz) pkg chipotle-Cheddar tortilla strips (such as New York Bakery Texas Toast)
  • 2 green onions, chopped

Instructions

  1. Cook rice according to package directions.
  2. Arrange lettuce, rice, beans, cheese, avocado, salsa, and tortilla strips in 6 bistro or pasta bowls. Serve with Cilantro-Lime Crema recipe, and sprinkle with green onions.

  • 1 (8-oz) carton reduced-fat sour cream
  • ¼ cup chopped fresh cilantro
  • ½ tsp ground cumin
  • 1 Tbsp fresh lime juice
