Hearty Beef Stew

Ingredients

  • 1 lb boneless chuck roast, trimmed
  • ½ onion, coarsely chopped
  • 3 carrots, cut into 2-inch pieces
  • 1 cup frozen green peas
  • 1 (14.5-oz) can diced tomatoes with basil, garlic, and oregano, drained
  • 1 cup beef broth
  • ½ (6-oz) can tomato paste
  • 1 Tbsp Worcestershire sauce
  • ¼ tsp salt
  • ½ tsp pepper

Instructions

  1. Cut beef into 1½-inch chunks. Combine beef and remaining ingredients in a 4-quart slow cooker.
  2. Cover and cook on LOW 6 to 8 hours or until beef is very tender.
  3. Divide stew into 3 portions; serve 2 portions. Refrigerate 1 portion up to 3 days.
