Creamy Baked Chicken
Parmesan-Herb Rice and Steamed Broccoli
Ingredients
- 2 lb boneless, skinless chicken breasts, halved crosswise
- 1 (8-oz) pkg diced cooked ham
- 6 slices provolone cheese
- 1 (10.75-oz) can cream of chicken soup
- ¼ cup dry white wine (or use chicken broth)
- ½ tsp paprika
Instructions
- Preheat oven to 350°F. Pound chicken to ½-inch-thickness; season with salt and pepper.
- Arrange chicken in a greased 13- x 9-inch baking dish; top with ham and cheese slices.
- Stir together soup, wine, and paprika; pour over cheese. Bake, uncovered, 25 to 30 minutes or until chicken is done.

- 2 cups long-grain white rice
- 1 Tbsp olive oil
- 2 Tbsp shredded Parmesan cheese
- 1 tsp Italian seasoning
- 2 (12-oz) pkg frozen steamable broccoli

- Steam rice according to package directions; toss with oil, cheese, and Italian seasoning. Season with salt and pepper to taste.
- Steam broccoli according to package directions; season to taste.
