Parmesan-Herb Rice and Steamed Broccoli

Ingredients

  • 2 lb boneless, skinless chicken breasts, halved crosswise
  • 1 (8-oz) pkg diced cooked ham
  • 6 slices provolone cheese
  • 1 (10.75-oz) can cream of chicken soup
  • ¼ cup dry white wine (or use chicken broth)
  • ½ tsp paprika

Instructions

  1. Preheat oven to 350°F. Pound chicken to ½-inch-thickness; season with salt and pepper.
  2. Arrange chicken in a greased 13- x 9-inch baking dish; top with ham and cheese slices.
  3. Stir together soup, wine, and paprika; pour over cheese. Bake, uncovered, 25 to 30 minutes or until chicken is done.

  • 2 cups long-grain white rice
  • 1 Tbsp olive oil
  • 2 Tbsp shredded Parmesan cheese
  • 1 tsp Italian seasoning
  • 2 (12-oz) pkg frozen steamable broccoli

  1. Steam rice according to package directions; toss with oil, cheese, and Italian seasoning. Season with salt and pepper to taste.
  2. Steam broccoli according to package directions; season to taste.
