Sweet-and-Sour Chicken
Green Onion Basmati Rice
Ingredients
- 2 lb boneless, skinless chicken thighs
- 2 Tbsp olive oil
- 1 organic red bell pepper, coarsely chopped
- 1 organic green bell pepper, coarsely chopped
- 2 cups cubed pineapple
- 4 green onions, cut into 1-inch pieces
- ⅓ cup low-sodium soy sauce
- 3 Tbsp honey
- 1½ Tbsp Sriracha hot sauce
- 1½ Tbsp grated ginger
- 1 Tbsp cornstarch
- 2 cloves garlic, minced
Instructions
- Cut chicken into 1-inch pieces; season lightly with salt and pepper. Cook in hot oil in a large, deep skillet over medium-high heat, stirring occasionally, 4 minutes.
- Add bell peppers; cook, stirring often, 4 minutes. Add pineapple and green onions; cook, stirring often, 3 minutes.
- Whisk together soy sauce, honey, Sriracha, ginger, cornstarch, and garlic; add to skillet. Bring to a boil, reduce heat, and simmer 2 to 3 minutes or until sauce is thickened.

- 1½ cups brown basmati rice
- 2 green onions, thinly sliced

- Cook rice according to package directions; stir in green onions.
