Sweet-and-Sour Chicken

Ingredients

  • 2 lb boneless, skinless chicken thighs
  • 2 Tbsp olive oil
  • 1 organic red bell pepper, coarsely chopped
  • 1 organic green bell pepper, coarsely chopped
  • 2 cups cubed pineapple
  • 4 green onions, cut into 1-inch pieces
  • ⅓ cup low-sodium soy sauce
  • 3 Tbsp honey
  • 1½ Tbsp Sriracha hot sauce
  • 1½ Tbsp grated ginger
  • 1 Tbsp cornstarch
  • 2 cloves garlic, minced

Instructions

  1. Cut chicken into 1-inch pieces; season lightly with salt and pepper. Cook in hot oil in a large, deep skillet over medium-high heat, stirring occasionally, 4 minutes.
  2. Add bell peppers; cook, stirring often, 4 minutes. Add pineapple and green onions; cook, stirring often, 3 minutes.
  3. Whisk together soy sauce, honey, Sriracha, ginger, cornstarch, and garlic; add to skillet. Bring to a boil, reduce heat, and simmer 2 to 3 minutes or until sauce is thickened.

Side Dish Ingredients

  • 1½ cups brown basmati rice
  • 2 green onions, thinly sliced

  1. Cook rice according to package directions; stir in green onions.
