Country-Fried Steak
Green Beans with LemonIngredients
- 2 (4-oz) top round cubed steaks
- 2 tsp extra virgin olive oil
- ½ cup chopped red onion
- 1 (8-oz) pkg sliced mushrooms
- ¾ cup beef broth
- 2 tsp cornstarch
Instructions
- Sprinkle steaks lightly with salt and pepper. Cook in hot oil in a skillet over medium-high heat 2 to 3 minutes per side or until browned. Remove from skillet.
- Add onion and mushrooms to skillet; cook, stirring occasionally, 8 minutes or until onions are tender and mushrooms are browned. Return steaks to skillet.
- Whisk together broth and cornstarch; add to skillet. Bring to a boil; cook 2 to 3 minutes or until sauce is thickened. Serve sauce with steak.

- 1 lb green beans
- 2 tsp olive oil
- 1 Tbsp fresh lemon juice
Side Dish Instructions
- Cook beans in boiling water to cover in a large saucepan 5 minutes or until crisp-tender; drain and plunge beans into ice water. Drain again.
- Toss beans with oil and lemon juice. Season with salt and pepper to taste.
