Green Beans with Lemon

Ingredients

  • 2 (4-oz) top round cubed steaks
  • 2 tsp extra virgin olive oil
  • ½ cup chopped red onion
  • 1 (8-oz) pkg sliced mushrooms
  • ¾ cup beef broth
  • 2 tsp cornstarch

Instructions

  1. Sprinkle steaks lightly with salt and pepper. Cook in hot oil in a skillet over medium-high heat 2 to 3 minutes per side or until browned. Remove from skillet.
  2. Add onion and mushrooms to skillet; cook, stirring occasionally, 8 minutes or until onions are tender and mushrooms are browned. Return steaks to skillet.
  3. Whisk together broth and cornstarch; add to skillet. Bring to a boil; cook 2 to 3 minutes or until sauce is thickened. Serve sauce with steak.

Side Dish Ingredients

  • 1 lb green beans
  • 2 tsp olive oil
  • 1 Tbsp fresh lemon juice

Side Dish Instructions

  1. Cook beans in boiling water to cover in a large saucepan 5 minutes or until crisp-tender; drain and plunge beans into ice water. Drain again.
  2. Toss beans with oil and lemon juice. Season with salt and pepper to taste.
