Ingredients

  • 1 (8-oz) pkg chopped onions (about 1½ cups)
  • 2 Tbsp minced garlic
  • 2 lb boneless pork shoulder roast
  • 1 (8-oz) pouch garlicky carnitas slow cook sauce (such as Frontera)
  • ¾ tsp salt
  • 24 fajita-size corn tortillas
  • ½ cup fresh salsa
  • 6 Tbsp reduced-fat sour cream
  • ¼ cup fresh cilantro leaves

Instructions

  1. Place onions, garlic, pork, sauce, and salt in a 6- or 7-quart slow cooker. Cover and cook on LOW 8 to 10 hours or until pork shreds easily with a fork.
  2. Remove pork from cooker and shred, removing fat. Return to cooker; stir to combine with cooking liquid.
  3. Heat tortillas according to package directions. Arrange tortillas in stacks of 2 tortillas each. Fill with pork, salsa, sour cream, cilantro, and Pineapple-Bell Pepper Relish recipe.

  • 1 (16-oz) container cored pineapple, chopped
  • 2 red bell peppers, chopped
  • ¼ cup chopped fresh cilantro
  • 2 Tbsp fresh lime juice

  1. Toss together all ingredients in a bowl.
