Ground Turkey Taco Salad

Ingredients
- 3 Tbsp olive oil, divided
- ¾ lb ground turkey
- 3 cloves garlic, divided and minced
- 1 tsp chili powder
- ½ tsp salt
- ¼ tsp pepper
- 2 Tbsp fresh lime juice
- 2 Tbsp chopped fresh cilantro (or use flat-leaf parsley)
- 1 romaine lettuce heart, shredded
- 1 ripe avocado, diced
- 2 Roma tomatoes, seeded and chopped
- 1 small jicama, peeled and shredded
Instructions
- Heat 1 Tbsp oil in a large nonstick skillet over medium-high heat; add ground turkey, 2 cloves minced garlic, chili powder, salt and pepper.
- Cook 8 minutes or until turkey is no longer pink, stirring occasionally.
- Whisk together lime juice and 1 clove minced garlic in a small bowl until blended.
- Gradually whisk in 2 Tbsp oil, blending well; stir in cilantro.
- Divide lettuce, turkey, avocado, tomato and jicama between 2 plates; drizzle with dressing.

- 2 whole wheat pitas
- 2 Tbsp olive oil
- 1 tsp chili powder
- 1 tsp ground cumin
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Preheat oven to 400°F.
- Cut pitas into wedges; split each wedge in half, and arrange on a baking sheet.
- Brush rough sides with oil; sprinkle with remaining ingredients.
- Bake 10 minutes until crispy, turning after 5 minutes.
