Caramelized Onion, Goat Cheese, and Arugula Pizzas
Apple Slices
Ingredients
- 3 large sweet onions, thinly sliced
- 3 Tbsp olive oil, divided
- 2 Tbsp balsamic vinegar
- 6 burrito-size whole wheat tortillas
- 1 (6-oz) log goat cheese
- ¼ cup milk
- 1 (5-oz) pkg organic baby arugula
Instructions
- Preheat oven to 475°F. Cook onions, covered, in 2 Tbsp hot oil in a large nonstick skillet over medium heat 5 minutes or until almost softened.
- Uncover and stir in vinegar. Cook 5 minutes, stirring often, until browned and tender.
- Arrange tortillas on greased baking sheets. Process cheese and milk in a food processor or blender until blended (or mash in a bowl using a wooden spoon); spread on tortillas. Top with onions.
- Bake 6 minutes or until tortillas are crisp. Drizzle with 1 Tbsp oil, and top with arugula.
