Sausage, White Bean, and Kale Soup

Ingredients

  • 1 (16-oz) pkg ground hot Italian turkey sausage
  • 1½ cups chopped onions 
  • 1 cup matchstick-cut carrots, chopped
  • 2 Tbsp minced garlic
  • 6 cups low-sodium chicken broth
  • 2 (15-oz) cans cannellini beans, drained and rinsed
  • 2 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp pepper
  • ½ (16-oz) pkg chopped kale

Instructions

  1. Cook sausage, onions, carrots, and garlic in a large Dutch oven over medium-high heat until sausage is browned and crumbly; drain, if needed, and return to pot.
  2. Add broth, beans, Italian seasoning, salt, and pepper; bring to a boil. Reduce heat, cover, and simmer 5 minutes, stirring occasionally.
  3. Stir in kale, and cook 10 minutes. Top each serving with Swiss Cheese Croutons recipe.

Side Dish Ingredients

  • 3 Tbsp butter, softened
  • 12 (1-oz) slices whole-grain bread
  • ¾ cup shredded reduced-fat Swiss cheese

Side Dish Instructions

  1. Preheat oven to 450°F. Spread butter over 1 side of each bread slice. Place 6 slices of bread, buttered sides down, on a baking sheet. Top each with cheese and remaining bread slices, buttered sides up.
  2. Bake sandwiches 6 to 8 minutes per side or until toasted and cheese is melted. Cut into cubes.
