Lettuce Wraps with Ginger-Orange Pork

Ingredients

  • Chopped cooked pork (from Ginger-Orange Pork recipe)
  • 1 Tbsp honey
  • 2 tsp low-sodium soy sauce
  • 1 tsp dark sesame oil
  • 1 tsp rice vinegar
  • ½ lb sugar snap peas, cut into thin strips
  • 1 red bell pepper, cut into thin strips
  • ½ cup thinly sliced green onions
  • 8 large romaine lettuce leaves, cut in half crosswise

Instructions

  1. Heat pork in microwave at HIGH 1 to 2 minutes or until warm.
  2. Combine honey, soy sauce, sesame oil and vinegar.
  3. Spoon pork mixture into lettuce leaves; top with sugar snap peas, bell pepper, and green onions. Drizzle with honey mixture; roll up to serve.
