Crustless Spinach Quiche

Ingredients

  • 2 Tbsp olive oil, divided
  • 1 cup thinly sliced onion
  • 1 red bell pepper, thinly sliced
  • 1 (5-oz) pkg baby spinach
  • 8 large eggs
  • 1 tsp paprika
  • 1 Tbsp chopped fresh thyme
  • ½ tsp salt
  • ½ tsp pepper
  • 1 pint grape tomatoes, halved

Instructions

  1. Preheat oven to 400°F.
  2. Heat 1 Tbsp oil in a large skillet over medium heat.
  3. Add onion and bell pepper; cook 10 minutes. Add spinach; toss until wilted, about 2 minutes. Remove from heat; cool slightly.
  4. Whisk together eggs, paprika, thyme, salt and pepper.
  5. Transfer vegetable mixture to a 9-inch pie plate rubbed with remaining oil.
  6. Pour egg mixture over vegetables; scatter tomatoes evenly over the top. Bake 40 to 45 minutes or until center is set.
