Crustless Spinach Quiche

Ingredients
- 2 Tbsp olive oil, divided
- 1 cup thinly sliced onion
- 1 red bell pepper, thinly sliced
- 1 (5-oz) pkg baby spinach
- 8 large eggs
- 1 tsp paprika
- 1 Tbsp chopped fresh thyme
- ½ tsp salt
- ½ tsp pepper
- 1 pint grape tomatoes, halved
Instructions
- Preheat oven to 400°F.
- Heat 1 Tbsp oil in a large skillet over medium heat.
- Add onion and bell pepper; cook 10 minutes. Add spinach; toss until wilted, about 2 minutes. Remove from heat; cool slightly.
- Whisk together eggs, paprika, thyme, salt and pepper.
- Transfer vegetable mixture to a 9-inch pie plate rubbed with remaining oil.
- Pour egg mixture over vegetables; scatter tomatoes evenly over the top. Bake 40 to 45 minutes or until center is set.
