Crowd-Pleaser
Spicy Vegetable Gumbo

Ingredients
- 1 cup brown rice (see Note)
- 1 green bell pepper, chopped
- ½ cup chopped red onion
- 4 stalks celery, chopped
- 1 Tbsp olive oil
- 1 (32-oz) carton vegetable broth
- 2 (14.5-oz) cans diced tomatoes
- 1 cup water
- 1 (16-oz) pkg frozen okra
- 1 (15-oz) can red kidney beans, drained and rinsed
- 1 Tbsp Cajun seasoning
Instructions
- Cook rice according to package directions.
- Meanwhile, sauté green pepper, onion, and celery in hot oil in a Dutch oven over medium-high heat 5 minutes or until tender and browned.
- Add broth, tomatoes, water, okra, beans, and Cajun seasoning. Cover; bring to a boil. Uncover and reduce heat; simmer 20 minutes. Season with salt and pepper to taste. Serve gumbo over rice.
