Beef Kofta Wraps
Chickpea, Tomato, and Cucumber TossIngredients
- ½ lb ground beef
- ¾ tsp ground coriander
- ¾ tsp minced fresh rosemary (or use 1 tsp dried)
- 2 cloves garlic, minced
- 2 gluten-free wraps (such as Toufayan)
- 1½ cups baby arugula
- ¼ cup refrigerated tzatziki sauce
Instructions
- Gently mix together beef, coriander, rosemary, garlic, and desired amount of salt and pepper; shape into 4 oblong patties.
- Cook patties in a large nonstick skillet over medium-high heat 6 to 8 minutes or until no longer pink, turning occasionally.
- Place 2 patties on each wrap; top with arugula and tzatziki sauce.

- 1 Tbsp olive oil
- 1 Tbsp lemon juice
- 1 clove garlic, minced
- ½ cup canned chickpeas, drained and rinsed
- ½ small English cucumber, coarsely chopped
- ½ cup grape tomatoes, halved
Side Dish Instructions
- Whisk together oil, lemon juice, garlic, and salt and pepper to taste in a large bowl. Add chickpeas, cucumber, and tomatoes; toss.
