Roasted Broccoli and Red Pepper Fettuccine Alfredo

Ingredients

  • 2 (12-oz) pkg broccoli florets
  • 2 red bell peppers, cut into chunks
  • 1 Tbsp minced garlic
  • 3 Tbsp olive oil
  • 1 (9-oz) pkg refrigerated fettuccine
  • 1 (10-oz) container refrigerated Alfredo sauce
  • ½ cup freshly shaved Parmesan cheese

Instructions

  1. Preheat oven to 475°F. Toss together broccoli, bell peppers, garlic, and oil on a rimmed baking sheet; spread in a single layer. Bake 15 minutes or until browned.
  2. Meanwhile, cook pasta according to package directions. Microwave sauce at HIGH 1 to 3 minutes or until thoroughly heated.
  3. Combine broccoli mixture, fettuccine, and Alfredo sauce; sprinkle with cheese.
