Asian Chicken Noodle Soup

Ingredients
- 2 Tbsp sesame oil
- 1 red bell pepper, chopped
- 1 bunch green onions, chopped
- 1 (8-oz) pkg sliced mushrooms
- 4 cloves garlic, minced
- 1 Tbsp minced ginger
- 6 cups low-sodium chicken broth
- 1 Tbsp low-sodium soy sauce
- 1 cup shredded rotisserie chicken, skin removed
- 8 oz whole-grain spaghetti
Instructions
- Heat oil in a Dutch oven over medium heat.
- Add bell pepper, white parts of green onion (reserving green tops), mushrooms, garlic and ginger.
- Cook 5 minutes or until vegetables are tender.
- Stir in broth, soy sauce and chicken; bring to a boil, reduce heat, and simmer 5 minutes.
- Add chicken and pasta; cook 10 to 12 minutes or until pasta is cooked.
- Stir in reserved green onion tops.
