Pork and Ramen Noodle Bowl

Ingredients

  • 2 lb ground pork
  • 1 (8-oz) pkg whole mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 (32-oz) cartons chicken broth
  • 2 Tbsp sesame oil
  • 3 Tbsp refrigerated ginger paste
  • 2 (12-oz) pkg broccoli slaw
  • 2 (3-oz) pkg ramen noodles, seasoning packets discarded
  • ¼ cup chopped fresh cilantro

Instructions

  1. Cook pork, mushrooms, and garlic in a large Dutch oven over medium heat until pork is browned and crumbly; drain and return to pot.
  2. Stir in broth, sesame oil, and ginger; bring to a boil.
  3. Add slaw and noodles; simmer 3 minutes or until noodles are tender. Stir in cilantro, and season to taste.
