Tilapia Provençal

Ingredients

  • 2 (6-oz) tilapia fillets
  • ½ tsp Italian seasoning
  • 1 Tbsp olive oil
  • 1 cup chopped tomatoes
  • ½ cup chopped red bell pepper
  • 2 green onions, thinly sliced
  • 1 clove garlic, minced
  • ¼ cup dry white wine
  • 1 Tbsp fresh lemon juice

Instructions

  1. Season fish lightly with salt and pepper; sprinkle with Italian seasoning. Cook in hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes per side or until fish flakes with a fork. Remove from skillet; keep warm.
  2. Cook tomato, bell pepper, onions, and garlic in skillet, stirring often, 5 minutes. Add wine and lemon juice. Cook 2 minutes or until thickened. Serve sauce over fish.

  • ½ lb green beans, trimmed
  • 1 Tbsp butter

Side Dish Instructions

  1. Steam beans in a steamer basket over boiling water 5 minutes or until crisp-tender. Toss with butter; season with salt and pepper to taste.
