Asian Chopped Salad with Chicken

Ingredients

  • 2 lb boneless, skinless chicken breasts, halved lengthwise
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • 4 oranges
  • 1 (12-oz) pkg chopped Asian salad kit (such as Fresh Express)
  • 1 (5-oz) pkg baby kale mix
  • ¼ cup chopped fresh cilantro
  • 1 avocado, sliced

Instructions

  1. Sprinkle chicken with salt and pepper. Cook chicken, in 2 batches, in 1 Tbsp hot oil per batch in a large nonstick skillet over medium-high heat 3 to 4 minutes or until done. Thinly slice chicken; keep warm.
  2. Meanwhile, peel and section oranges over a small bowl to collect juices. Combine dressing from salad kit and orange juice.
  3. Combine greens from salad kit, kale mix, orange sections, cilantro, and dressing mixture; toss.
  4. Top with chicken and avocado; sprinkle with wontons and nuts from kit.
