Asian Chopped Salad with Chicken
Ingredients
- 2 lb boneless, skinless chicken breasts, halved lengthwise
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
- 4 oranges
- 1 (12-oz) pkg chopped Asian salad kit (such as Fresh Express)
- 1 (5-oz) pkg baby kale mix
- ¼ cup chopped fresh cilantro
- 1 avocado, sliced
Instructions
- Sprinkle chicken with salt and pepper. Cook chicken, in 2 batches, in 1 Tbsp hot oil per batch in a large nonstick skillet over medium-high heat 3 to 4 minutes or until done. Thinly slice chicken; keep warm.
- Meanwhile, peel and section oranges over a small bowl to collect juices. Combine dressing from salad kit and orange juice.
- Combine greens from salad kit, kale mix, orange sections, cilantro, and dressing mixture; toss.
- Top with chicken and avocado; sprinkle with wontons and nuts from kit.
