Swiss Turkey Burgers with Mushrooms and Onions
Tomato-Zucchini Salad
Ingredients
- 6 (4-oz) frozen organic turkey burgers
- 6 (0.67-oz) slices reduced-fat Swiss cheese (such as Sargento)
- 1 (8-oz) pkg sliced onions
- 1 (16-oz) pkg sliced mushrooms
- 2 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
- 6 Tbsp roasted garlic mayonnaise (such as Hellman's)
- 6 (1.9-oz) whole wheat hamburger buns
- 2 cups baby spinach
Instructions
- Cook burgers, in batches, in a large nonstick skillet over medium-high heat 6 minutes per side or until done, topping with cheese during last 2 minutes of cooking. Remove from skillet, and keep warm.
- Cook onion and mushrooms in hot oil in skillet, stirring often, 5 minutes. Stir in salt and pepper; cook 2 to 5 minutes or until tender.
- Spread mayonnaise over bottom buns. Top with spinach, burgers, mushroom mixture, and bun tops.
Side Dish Ingredients
- 2 Tbsp extra virgin olive oil
- 2 Tbsp white wine vinegar
- 2 Tbsp fresh lemon juice
- ½ tsp lemon zest
- ½ tsp kosher salt
- ½ tsp pepper
- 1 (16-oz) pkg sliced zucchini
- 1 pint multicolored cherry tomatoes
- ¼ cup chopped fresh basil
Side Dish Instructions
- Whisk together oil, vinegar, lemon juice, zest, salt, and pepper in a large bowl. Add zucchini, tomatoes, and basil; toss.
