Swiss Turkey Burgers with Mushrooms and Onions

Ingredients

  • 6 (4-oz) frozen organic turkey burgers
  • 6 (0.67-oz) slices reduced-fat Swiss cheese (such as Sargento)
  • 1 (8-oz) pkg sliced onions
  • 1 (16-oz) pkg sliced mushrooms
  • 2 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper
  • 6 Tbsp roasted garlic mayonnaise (such as Hellman's)
  • 6 (1.9-oz) whole wheat hamburger buns
  • 2 cups baby spinach

Instructions

  1. Cook burgers, in batches, in a large nonstick skillet over medium-high heat 6 minutes per side or until done, topping with cheese during last 2 minutes of cooking. Remove from skillet, and keep warm.
  2. Cook onion and mushrooms in hot oil in skillet, stirring often, 5 minutes. Stir in salt and pepper; cook 2 to 5 minutes or until tender.
  3. Spread mayonnaise over bottom buns. Top with spinach, burgers, mushroom mixture, and bun tops.

Side Dish Ingredients

  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp white wine vinegar
  • 2 Tbsp fresh lemon juice
  • ½ tsp lemon zest
  • ½ tsp kosher salt
  • ½ tsp pepper
  • 1 (16-oz) pkg sliced zucchini
  • 1 pint multicolored cherry tomatoes
  • ¼ cup chopped fresh basil

Side Dish Instructions

  1. Whisk together oil, vinegar, lemon juice, zest, salt, and pepper in a large bowl. Add zucchini, tomatoes, and basil; toss.
