Cheddar Cheese Quinoa Burgers with Avocado
Creamy Chipotle Slaw
Ingredients
- ⅓ cup uncooked red quinoa
- ½ (15-oz) can black beans, drained and rinsed
- 2 green onions, chopped
- ½ carrot, finely grated
- 1 Tbsp chopped fresh flat-leaf parsley
- 1 egg white
- 1 Tbsp olive oil
- ⅓ cup freshly shredded Cheddar cheese
- 2 whole-grain hamburger buns
- 1 ripe avocado, sliced
- ¼ cup thinly sliced red onion
- 2 Tbsp fresh salsa
Instructions
- Bring quinoa and ⅔ cup water to a boil in a medium saucepan. Reduce heat to low, cover and simmer until all liquid is absorbed, about 15 to 20 minutes.
- Mash beans into a thick paste in a medium bowl. Stir in green onions, carrot, cooked quinoa, parsley, egg and ¼ tsp salt.
- Form mixture into 2 or 3 patties; cover and chill 30 minutes.
- Heat oil in large skillet; cook patties, 5 minutes per side or until golden brown.
- Top patties evenly with cheese during the last 1 minute of cooking.
- Place patties on bottoms of buns; top evenly with avocado and red onion.
- Cover with bun tops; serve with salsa.

- 1 (½-lb) container tricolor shredded slaw mix
- ¼ cup mayonnaise
- 2 Tbsp apple cider vinegar
- 2 Tbsp honey
- 2 Tbsp chopped chipotle chiles in adobo sauce
- 1 Tbsp celery seed
Side Dish Instructions
- Combine all ingredients in a large bowl. Stir in ¼ tsp salt and ¼ tsp pepper; toss well.
