Cheddar Cheese Quinoa Burgers with Avocado

Ingredients

  • ⅓ cup uncooked red quinoa
  • ½ (15-oz) can black beans, drained and rinsed
  • 2 green onions, chopped
  • ½ carrot, finely grated
  • 1 Tbsp chopped fresh flat-leaf parsley
  • 1 egg white
  • 1 Tbsp olive oil
  • ⅓ cup freshly shredded Cheddar cheese
  • 2 whole-grain hamburger buns
  • 1 ripe avocado, sliced
  • ¼ cup thinly sliced red onion
  • 2 Tbsp fresh salsa

Instructions

  1. Bring quinoa and ⅔ cup water to a boil in a medium saucepan. Reduce heat to low, cover and simmer until all liquid is absorbed, about 15 to 20 minutes.
  2. Mash beans into a thick paste in a medium bowl. Stir in green onions, carrot, cooked quinoa, parsley, egg and ¼ tsp salt.
  3. Form mixture into 2 or 3 patties; cover and chill 30 minutes.
  4. Heat oil in large skillet; cook patties, 5 minutes per side or until golden brown.
  5. Top patties evenly with cheese during the last 1 minute of cooking.
  6. Place patties on bottoms of buns; top evenly with avocado and red onion.
  7. Cover with bun tops; serve with salsa.

  • 1 (½-lb) container tricolor shredded slaw mix
  • ¼ cup mayonnaise
  • 2 Tbsp apple cider vinegar
  • 2 Tbsp honey
  • 2 Tbsp chopped chipotle chiles in adobo sauce
  • 1 Tbsp celery seed

Side Dish Instructions

  1. Combine all ingredients in a large bowl. Stir in ¼ tsp salt and ¼ tsp pepper; toss well.
