Bacon and Egg Grits Bowls

Ingredients

  • ¾ cup quick-cooking grits
  • 1 Tbsp butter
  • ½ tsp garlic salt
  • 8 slices center-cut bacon
  • 4 large eggs
  • ⅛ tsp salt
  • ¼ tsp pepper
  • 1 cup grape tomatoes, halved
  • 2 green onions, chopped

Instructions

  1. Prepare grits according to package direction; stir in butter and garlic salt.
  2. Meanwhile, cook bacon, in batches, in a large skillet over medium heat 6 to 8 minutes or until crisp.
  3. Remove from skillet, and crumble, reserving 1 Tbsp drippings in pan.
  4. Crack eggs into skillet. Cover and cook 3 minutes or until whites are set and yolks are cooked to desired doneness; sprinkle with salt and pepper.
  5. Divide grits among 4 serving bowls; top with tomatoes, eggs, bacon and green onions.
