Bacon and Egg Grits Bowls

Ingredients
- ¾ cup quick-cooking grits
- 1 Tbsp butter
- ½ tsp garlic salt
- 8 slices center-cut bacon
- 4 large eggs
- ⅛ tsp salt
- ¼ tsp pepper
- 1 cup grape tomatoes, halved
- 2 green onions, chopped
Instructions
- Prepare grits according to package direction; stir in butter and garlic salt.
- Meanwhile, cook bacon, in batches, in a large skillet over medium heat 6 to 8 minutes or until crisp.
- Remove from skillet, and crumble, reserving 1 Tbsp drippings in pan.
- Crack eggs into skillet. Cover and cook 3 minutes or until whites are set and yolks are cooked to desired doneness; sprinkle with salt and pepper.
- Divide grits among 4 serving bowls; top with tomatoes, eggs, bacon and green onions.
