Ground Beef, Mushroom, and Spinach Casserole

Ingredients

  • ½ lb ground beef
  • 1 (8-oz) pkg sliced mushrooms
  • ½ small red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 (5-oz) pkg spinach
  • ¼ tsp salt
  • ¼ tsp pepper
  • 6 large eggs
  • ½ Tbsp Dijon mustard

Instructions

  1. Preheat oven to 400°F. Cook beef, mushrooms, onion, and garlic in a skillet over medium heat, stirring until beef is browned and crumbly. Drain and return to skillet. Gradually stir in spinach, salt, and pepper until spinach is wilted.
  2. Whisk together eggs and mustard in a bowl until blended; stir in beef mixture. Pour into a lightly greased 1½-quart baking dish.
  3. Bake 25 minutes or until puffed and set.

Side Dish Ingredients

  • ½ (5-oz) pkg mixed greens
  • ⅓ cup grape tomatoes, halved
  • 2 Tbsp chopped fresh flat-leaf parsley
  • 1 Tbsp extra virgin olive oil
  • 2 tsp red wine vinegar

Side Dish Instructions

  1. Toss together all ingredients in a bowl. Season with salt to taste.
