Ground Beef, Mushroom, and Spinach Casserole
Mixed Greens and Fresh Herb Salad
Ingredients
- ½ lb ground beef
- 1 (8-oz) pkg sliced mushrooms
- ½ small red onion, thinly sliced
- 2 cloves garlic, minced
- 1 (5-oz) pkg spinach
- ¼ tsp salt
- ¼ tsp pepper
- 6 large eggs
- ½ Tbsp Dijon mustard
Instructions
- Preheat oven to 400°F. Cook beef, mushrooms, onion, and garlic in a skillet over medium heat, stirring until beef is browned and crumbly. Drain and return to skillet. Gradually stir in spinach, salt, and pepper until spinach is wilted.
- Whisk together eggs and mustard in a bowl until blended; stir in beef mixture. Pour into a lightly greased 1½-quart baking dish.
- Bake 25 minutes or until puffed and set.
Side Dish Ingredients
- ½ (5-oz) pkg mixed greens
- ⅓ cup grape tomatoes, halved
- 2 Tbsp chopped fresh flat-leaf parsley
- 1 Tbsp extra virgin olive oil
- 2 tsp red wine vinegar
Side Dish Instructions
- Toss together all ingredients in a bowl. Season with salt to taste.
