Bolognese Tortellini Bake

Ingredients

  • 1 (19-oz) pkg frozen tortellini
  • 1½ lb ground beef
  • ½ cup chopped onion
  • 3 cloves garlic, minced
  • ½ cup dry red wine
  • 2 Tbsp tomato paste
  • 1 (28-oz) can crushed tomatoes
  • 1 tsp Italian seasoning
  • 1 (8-oz) pkg shredded mozzarella cheese

Instructions

  1. Preheat oven to 350°F. Place tortellini in a lightly greased 13-x 9-inch baking dish. Thaw slightly while beef mixture cooks.
  2. Cook beef, onion, and garlic in a large skillet over medium heat until browned and crumbly; drain and return to skillet.
  3. Add wine and tomato paste; cook, stirring constantly, 2 minutes. Stir in tomatoes and Italian seasoning; simmer 10 minutes.
  4. Add sauce to tortellini; stir until pasta is coated. Cover and bake 30 minutes or until pasta is tender. Uncover, sprinkle with cheese, and bake 10 minutes longer.

  • 1 (12-oz) pkg salad greens
  • 1 tomato, chopped
  • ½ cup Ranch dressing

Side Dish Instructions

  1. Toss salad greens, tomato, and dressing just before serving.
