Roast Beef Roll-Ups with Basil Mayo
Avocado and Strawberry Salad
Ingredients
- ¼ cup mayonnaise
- 2 Tbsp chopped fresh basil
- 1 tsp fresh lemon juice
- ½ lb thinly sliced low-sodium roast beef
- 2 cups arugula
- ¼ cup thinly sliced red onion
Instructions
- Combine mayonnaise, basil and lemon juice.
- Stack roast beef slices in 8 piles on a flat work surface.
- Spread mayonnaise mixture evenly over roast beef; top with arugula and red onion.
- Roll up; secure with toothpicks.
Side Dish Ingredients
- 3 Tbsp fresh lemon juice
- 3 Tbsp extra virgin olive oil
- 2 tsp honey
- 1 tsp Dijon mustard
- ¼ tsp salt
- ¼ tsp pepper
- 2 avocados, pitted and diced
- 1 (16-oz) pkg strawberries, halved
Side Dish Instructions
- Whisk together lemon juice, oil, honey, mustard, salt and pepper.
- Combine avocado and strawberries; drizzle with lemon mixture.
- Toss gently.
