Roast Beef Roll-Ups with Basil Mayo

Ingredients

  • ¼ cup mayonnaise
  • 2 Tbsp chopped fresh basil
  • 1 tsp fresh lemon juice
  • ½ lb thinly sliced low-sodium roast beef
  • 2 cups arugula
  • ¼ cup thinly sliced red onion

Instructions

  1. Combine mayonnaise, basil and lemon juice.
  2. Stack roast beef slices in 8 piles on a flat work surface.
  3. Spread mayonnaise mixture evenly over roast beef; top with arugula and red onion.
  4. Roll up; secure with toothpicks.

Side Dish Ingredients

  • 3 Tbsp fresh lemon juice
  • 3 Tbsp extra virgin olive oil
  • 2 tsp honey
  • 1 tsp Dijon mustard
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 avocados, pitted and diced
  • 1 (16-oz) pkg strawberries, halved

Side Dish Instructions

  1. Whisk together lemon juice, oil, honey, mustard, salt and pepper.
  2. Combine avocado and strawberries; drizzle with lemon mixture.
  3. Toss gently.
